Happy 2016! Tis the season for resolutions and goal setting. This year, I'm making monthly challenges for myself with my 2016 Commit30 planner. I love the concept on working towards my goals little by little until they become a habit. This planner is a perfect place to track my progress on my goals.
My first monthly challenge is all about consistent meal planning. When I actually take the time to do this, my weeks are just plain smoother. On the weeks that I don't do it, I find myself running to the store frequently and in the end, spending much more on food in general. It's something I want to make a regular habit. Meal planning (to me) doesn't have to be about eating home cooked meals 7 days a week. I like to plan out 5 days, because in reality, we tend to go out for dinner a couple times a week, especially on the weekends.
Here's my week one menu and I would love for you guys to share what you're making. Trying tried and true new recipes can make this a more fun task. If you post any of your meals (or menu plan) on Instagram, be sure to use #jepmealplanning so we can easily share dinner ideas. Recipes are not a necessity as we can always search similar ideas online.

MONDAY: Grilled Chicken with Lemon Basil Pasta (a family favorite). My husband and I love the chicken and our kids love the pasta (win-win). Pioneer Woman, you are my hero.
TUESDAY: Boneless Short Ribs with Sweet Potato Fries. Boneless short ribs are so flavorful and do not require much more than salt and pepper to season. I slow cook them in a dutch oven all day until they are fall apart tender and pair them up with roasted sweet potato fries. I make a big batch of ribs for tomorrows meal.
WEDNESDAY: Short Rib and Vegetable Stir Fry. Utilize yesterday's leftovers for a quick stir fry meal. I prefer snow peas, broccoli, red peppers, red onions, carrots and stir fry sauce. Easy peasy.
THURSDAY: Shrimp Tacos and Cheese Quesadillas. No recipe necessary Put together quickly on a busy night. My husband is trying to go 'low carb' for January, so his will be a taco bowl.
FRIDAY: Chili with Cornbread. I love a meal that cooks all day for busy evenings and we always have leftover chili that can be eaten for lunches over the weekend.
