Sometimes the most challenging part about meal planning is coming up with dinner ideas. I believe it's easy to get into 'dinner ruts' and make the same things over and over. Having a family with a few picky eaters, I often feel like my options are limited and fall into the dinner rut more often than I'd like. I love when people share their favorite weeknight go-to recipes to inspire me to change things up.
So that's exactly what I'm doing here...the following are some family favorites that hopefully will help you to fill in that meal planner. Simply click on recipe name for link.
MONDAY: (slow cooker option) White Chicken Chili.. this recipe has been passed around by my girlfriends for years. Unfortunately, I do not know the original source of this recipe, so I typed up a PDF file to download. It's a well-liked recipe.
TUESDAY: Turkey Meatballs with Spinach & Cheese over Pasta...This is not diet food. Although, it is definitely a favorite in my house. Treat yo self once in awhile.
WEDNESDAY: Roman-Style Chicken Thank you Giada for a clean & easy, yet flavorful chicken dish. Paleo friendly.
THURSDAY: (slow cooker option) Beef Stew with Caramelized Onions & Red Wine This recipe is best when the beef has all day to cook. I substitute the stew meat for boneless short ribs. It is so good over packaged gnocchi or noodles and paired up with some crusty french bread. #guestworthy
FRIDAY: To be real, by the time Friday rolls around, I'm ready to go out and leave the cooking to someone else. But if that's not an option, I want easy...Grilled Monterey Jack & Corn Quesadillas. Pair this up with a green salad and you're golden. These quesadillas are crazy good.
